INGREDIENTS
7 roasted or steamed sweet potatoes
1/3 cup plain flour of your choice - I used a mix of rice flour + coconut but you can use corn flour as well
1/3 cup plant-based milk - I used a mix of rice + hazelnut milk
2 pasture raised eggs or 2tbsp of chia seeds soaked 5-10 min in 6tbsp of filtered water
1/4 tsp turmeric
1 tbsp MCT oil ( or basic coconut oil)
3 good pinches of sea salt
1 tsp cinnamon (optional)
TOPPING: Bee pollen, Manuka honey and fresh seasonal fruits of your choice
PREPARATION
Mix all these ingredients together
Add 2-3 tbsp of the mixture in a hot pan
Leave it enough time on both side to cook perfectly inside the pancake 🥞
Add Toppings of your choice - I used bee pollen 🐝 Sliced banana and hazelnut but you can use blueberries, raspberries, grounded almond, honey or even salty food: fried egg with pancetta or honey-roasted ham it’s delicious.
